Tavern - Member of the Conservatoire International des
Cuisines Méditerranéennes
To enjoy authentic, traditional Cypriot cooking, a visit to the
tavern is a must. Our chef is spoiling our guest with authentic
dishes from the traditional cuisine of Cyprus.

As a representative of Cyprus in traditional cypriot cooking
we are proud members of the Conservatoire
International des Cuisines Méditerranéennes. Together with
other mediterranean countries (like Turkey,
Lebanon,
Tunisia, Morocco,
Italy, Greece, France etc.) we organize events, in order to taste
the
traditional kitchen of each country and exchange recipes and ideas of gourmet
cooking. 
In November 2006 we arranged for the first time
the annual event. Participating members have been
Italy, Greece, Tunisia, Catalonia and Cyprus. 
Cooking and
Recipes

from trusted sources. The Cypriot kitchen is rich und has a huge
diversity. The unique location of the island at the intersection
of three continents, enriched the prescriptions, spices and the
cook
art
of Cyprus strongly. The kitchen of Cyprus is influences
among other of the Greek, Italian, Lebanese and Turkish food.
One recipe as an example:
Fasollia Yachni (White beans with tomato)
1 ½ glasses white beans
2 carrots shopped
2 – 3 onions shopped
1 – 2 cloves of garlic
ca. 1 glass celery shopped
1 glass tomato juice
3 – 4 spoons olive oil
salt and pepper
Wash the beans in cold water and leave them over night.
Put the beans on in fresh water and cook them. Pour away the water
and put the beans on again with fresh water and all ingredients,
but without salt. Just before end of cooking time put the salt.
You serve the beans as main dish, with salad, black olives, onions.
 Specialities - traditional
meals
The national speciality is "Meze", a culinary cross section,
which exists of up to 20 different dishes., starting with salad and dips,
grill, side dishes and dessert. You find fish or meat meze, meaning the
main dishes consists either of fish or meat specialities. As specialities
are considered also the Kebabs (pieces of lamb or other meat skewered and
roasted over charcoal fire), the Stifado (a stew of beef or hare cooked
with wine, vinegar, onion and spices), Koubebia (vine leaves stuffed with
minced meat and rice) and Tava (a tasty stew of meat, herbs and onions).
In our village tavern traditional meals are prepared with a lot of care.
Cyprus beverage - Cypriot Wines
Cyprus is renowned for its good wine. The Cypriot Wine was already
in the antiquity famous for its quality and excellent taste.
This has of course to do with the superb climate of the island.
You find all kinds of wine, white, rose and red; from different
regions of Cyprus. The village wines are liked and they go
with the traditional food.
Cyprus is also famous for its honey-sweet red wine called "Commandaria".
Commandaria is an excellent desert wine. People say it is the
oldest wine in the world. Famous it become at the time of Richard
Lionhard and the time when Cyprus was occupied by the Order of
the Knights of the Temple.

Our
Tavern, is in the nice little village of Tochni between Larnaca
and Limassol. The CYPRUS VILLAGES reception and our Tochni
Tavern by the pool offer a panoramic view of the whole village,
the serene countryside and the pristine sea below.
